1. Documented Pest Management Plan
Your business must have a written pest management plan that includes a site plan showing all interior and exterior bait station and monitoring device locations, a schedule of routine pest control services, a list of approved pesticides and their safety data sheets (SDS), staff roles and responsibilities for pest prevention, and procedures for responding to pest sightings. This plan must be reviewed and updated at least annually.
2. Pest Control Service Records
HACCP auditors will request a minimum of 12 months of pest control service records. Each service report must document date and time of service, monitoring device inspection results, any pest activity detected with species and location, corrective actions taken, pesticide used and application method, and technician name and licence number. Trend reports showing pest activity over time are also expected for HACCP compliance.
3. Proofing & Exclusion Standards
Your facility must maintain structural integrity to prevent pest entry. HACCP standards require all external openings sealed or screened, gaps around pipes and cables filled, door sweeps fitted on all external doors, air curtains or strip curtains at loading docks and kitchen entrances, drains covered with grates and maintained, and ventilation openings screened with mesh no larger than 2 mm.
4. Monitoring Devices
HACCP requires a comprehensive monitoring network including exterior rodent bait stations at 10-15 metre intervals around the building perimeter, interior glue boards in pest-susceptible areas, insect light traps (ILTs) in food production and storage areas, and pheromone traps for stored product pests. All monitoring devices must be numbered, mapped, inspected on a scheduled frequency, and results recorded.
5. Chemical Use Compliance
Only MOCCAE-approved pesticides may be used in RAK food facilities. HACCP requires that pesticides are stored in a locked cabinet away from food and ingredients, applied only when food is covered or removed, applied by licensed technicians only, and that material safety data sheets (MSDS) are maintained for all chemicals on site. Fogging or spraying should not occur during food production hours.
6. Staff Training & Awareness
All food handling staff should receive basic pest awareness training covering how to identify common pest signs, procedures for reporting sightings, the importance of sanitation and waste management, and their role in maintaining proofing measures. Training records should be maintained for HACCP audit review.
RAK Municipality-Specific Requirements
In addition to HACCP standards, RAK Municipality requires all food businesses to hold a valid pest control contract with a municipality-approved provider, display pest control service certificates in the premises, maintain pest control logs on-site and available for inspection, report significant pest infestations to the municipality, and cooperate with municipal pest control directives during public health campaigns.
